Raclette

Raclette Plate

Coming from the french verb “racler” meaning to scrape. Raclette is a semi soft, wash rind cheese that is perfect for melting. The taste is rich, salty, nutty, with a hint of fruity sweetness and tang. The name is rooted in the tradition of cheesemakers melting the cut surface on fire heated boulders and scraping the melted cheese over boiled potatoes and cornichons.

Pique-Nique is participating in the modern version by broiling the cut edges of a half wheel of Raclette and scraping it over boiled potatoes, your choice of charcuterie meat, cornichons, baguette, and served alongside a dressed arugula salad.
